about this ramen: our infamous vampire slayer tonkotsu ramen - chock-full of enough garlic to ward off even the most enthusiastic bloodsucker. rich and hearty, perfect for the incoming freeze-fest. if you're not a big garlic fiend (or if you’re an *actual* vampire) then you're ok too - the garlic comes seperately so you can add as much or as little as you like.
Jay Rayner - The Observer: "The tonkotsu broths, made by boiling pork bones for a dozen hours or more until the stock takes on a white, creamy, lip-smacking, gelatine-rich vigour, had profound depth. The noodles had necessary bite. The eggs had perfectly jellied yolks; remarkable when served in a restaurant, a small miracle when delivered halfway across the country.
