about this ramen: this is our signature shoyu ramen, loosely based on the new wave tokyo style. the soup is a 50:50 mix of golden chicken soup and seafood dashi, the dashi containing kombu from hokkaido, and dried sardines from the setouchi region, plus high-quality dried mackerel + bonito. it’s packed with umami, light but hearty, and just the kind of ramen we could (and often do) eat every day.
