ABOUT THIS PRODUCT

about this ramen: this is our classic shoyu ramen, loosely based on new wave tokyo style. the soup is a 50:50 mix of golden chicken soup and seafood dashi, the dashi containing kombu from hokkaido, and dried sardines from the setouchi region, plus high-quality dried bonito. it’s packed with umami, light but hearty, and just the kind of ramen we could (and often do) eat every day.

contents: golden chicken chintan + seafood dashi double-soup with shoyu tare; chiyu (chicken oil); custom thin wavy tokyo-style noodles; braised pork belly chashu; menma; naruto-maki; nori. seasoned ajitama egg not included - add one here.

COOKING
ready in fifteen minutes. everything arrives frozen and sealed. add onions and extra toppings, if you like.

thaw the toppings under the cold tap. broth pack into boiling water for 10 minutes, chashu in for the last 2. noodles as instructed. build. full instructions.

SUNSET RED TONKOTSU RAMEN KIT

I have been enjoying Matsudai ramen kits for some years now.
Expecting the same I ordered two kits.
So disappointed.
The set up has changed and is now effectively boil in the bag from frozen with the toppings included in the bag rather than being added at the end. You put the warmed bag contents into a sieve(two sieves in this instance) over the serving bowls and then fish the toppings out of the sieve to put on top. Other than creating an unholy mess, the meat, which previously you browned separately in a dry pan, becomes wobbly, fatty, pale and unappetizing and the toppings are largely indistinct. Previously the bowl looked great with the browned meat and toppings(of note spring onions no longer included, presumably because they do not freeze well)-but no more!
On the plus side the broth was as good as ever, as were the noodles and ajitama eggs.
I understand that freezing the kits means less waste from the restaurant perspective, and less plastic, but sadly I will not be ordering these again.

Tastes horrible

Cooked the ramen correctly as instructed but the broth tasted awful. I’ve had that ramen before in restraints and it’s never tasted like that. The noodles were a horrible consistency too.

Just come back from Japan and this is a close as it’s gonna get to the real deal in the UK.

Delicious, perfect blend of chicken broth and dashi, noodles had bite and the chashu was unctuous.

broken soup bag, soup is very strong dashi flavour

one of my shoyu kits had a compromised seal on the soup pouch so it leaked all over the ingredients so we were one broth down...
also this is personal preference, but we were not huge fans of the strong dashi flavour of the shoyu broth, we felt like it overpowered any shoyu flavour it would have... but still tasty overall. the noodles are amazing!

Ramen Kits

I have tried 2 kits and have been very happy with the ease of preparation and taste. They are great for a good quick meal like one would get in a restaurant. I would however prefer a larger serving of pork slices.

Way to salty

Such a shame I was so looking forward to the chippy. It was way way too salty so much so that I couldn’t taste all the other bits. My sister couldn’t eat her’s. I managed to power through mine as I was hungry. I will say the noodles were really good boiled and fried. I haven’t tried the other dishes in my order but I’m hoping they aren’t the same.

Tasty ramen delivery without compromising on quality

I was impressed at the freshness of the ramen and would order again. If you love ramen but don’t have an authentic satisfactory restaurant near you, Matsudai is the answer. Unfortunately I’ve yet to find out how I can keep a stock for emergencies as while it is freezer friendly, I don’t want to risk ruining the perfectly runny ramen egg.

Item arrived 4 days after dispatch and was unsafe to eat

Item arrived with ice packs completely thawed 4 days after dispatch.
I didn't mind as they offered to resend. I requested 21st December as new date, or New Year but they didn't dispatch and won't respond to my emails.
£49 and nothing to show for it except a video of inedible food from the delivery.
I think this could be nice if you live in a city and delivery is better, but if you live in a city you probably wouldn't need to order food to prepare at home as you could order hot take out.

I’ve had the Signature Shoyu Ramen a few times now and it’s just gorgeous. A ramen night in this house is a very happy night!

I thought I had gone to Japan

But seriously….. Matsudai ‘kits’ deliver really good Ramen. They are stupidly easy to make into a meal (and I ignore some of the instructions and microwave the broth to heat it, I know, I know, but it works perfectly well) and the little trimmings are just ready to add. This is ‘restaurant quality’ at home.

The ‘Signature Shoyu’ ramen is quite light (the opposite of the classic Tonkotsu which is a real winter warmer that requires a short nap after eating) and the broth is notably different being half seafood broth.I’ve tried most Matsudai Ramens and they’re all great and arrive promptly and perfectly.

I would note that sometimes I have no idea what I’m ordering, I’m not a Japanese speaker and ordering is sometimes guesswork for me, for example when looking at the ingredients, what is shio tare? negi lard? rayu? and do I want to add some extra ‘menma’? etc., but you know what, it’s all good, I like an adventure. Yes, it feels like I’ve gone to Japan and don’t quite know what I’m ordering, but it is all delicious and I’ve learned something and worked out my favourites (I think that’s probably ‘Tantanmen’). Oh, and it’s not all ‘brothy’, there’s a new Shirunashi Mazesoba that I just have to try, simply because it’s not brothy, ie not what I thought it would be.
