about this ramen: in the western world, tonkotsu ramen - often referred to simply as hakata ramen in japan - is arguably the most famous and coveted variant, the creamy white soup selling us a happily familiar experience. our sunset red comes with a healthy dose of our house rayu chilli oil. the title is a nod to keizo shimamoto’s legendary nyc shop ramen shack, which also served a spicy tonkotsu similar to this one.
