about this ramen: in the western world, tonkotsu ramen - often referred to simply as hakata ramen in japan - is arguably the most famous and coveted variant, the creamy white soup selling us a happily familiar experience. our sunset red comes with a healthy dose of our house rayu chilli oil. the title is a nod to keizo shimamoto’s legendary nyc shop ramen shack, which also served a spicy tonkotsu similar to this one.

we ship monday to friday for next day delivery, tuesday to saturday. order by 2pm the day before. delivery is £5.75, free over £60. some postcodes are excluded.

how do i cook it

fifteen minutes, straight from the freezer. thaw the toppings under the cold tap. broth pack into boiling water for 10 minutes, chashu in for the last 2. noodles as instructed, then build. full instructions.

can i collect instead

yes, and it’s free. cardiff, weds to sat evenings and saturday daytime. taffs well, monday to friday in the daytime.

what if i’m not in

please send it somewhere someone will be in to take it. if plans change, you can change the address up to 9am the day before, or once it’s dispatched use the tracking link to leave it in a safe place or divert it with the courier.

do i need anything else

the kit is complete except for anything fresh. we don’t include onions or vegetable toppings, as they deliver terribly. if you’d like an egg, you can add one with the extra toppings.

can i subscribe

yes. kits arrive automatically each month and go straight in the freezer. what you pay depends on the kits and extras you pick. how subscriptions work.

Great Ramen

The delivery, which is no fault of Matsudai, is always miss delivered and is very frustrating that it is days late and to a service center

I particularly like the Sunset Red, there's something special about a bit of extra spice in a Tonkotsu. It's very easy to put together one of these meals, and for it to look fabulous, restaurant style, when you plate it up. The fresh noodles are a big step up from dehydrated or from the 'so called fresh' sachets you can buy in supermarkets. The stock is fabulously rich, something so simple you just heat it in minutes, but great because Matsudai have spent hours and hours slow cooking it. Matsudai changed their packaging/format recently with the components being frozen in separate packets and I like that as I often buy half a dozen ramen sets and freeze a bunch of them, and it's actually easier to cook and get perfect results.

If you like an Ajitama egg with your ramen the Matsudai ones arrive absolutely perfectly, which is amazing.

Unfortunately, we were not happy with our visit. The food at Ramon wasn’t to our taste, and we weren’t made aware of any alternative menu options. For £95, the meal felt extremely poor value especially with starters that were just small pieces of cucumber. Overall, it came across as a rip‑off and not worth the cost.

We're a dedicated ramen shop and we work really hard to make our ramen some of the most acclaimed in the UK. It can't be to everyone's taste but I am sorry that you felt the meal wasn't great value.

Absolutely delicious

We came back from Japan and were having withdrawal symptoms without any decent ramen until we discovered Matsudai Ramen. I was abit nervous as it wasn’t cheap but the quality and authenticity was fantastic. It was also so easy to cook and put together. Easily as good as anything we had in Japan!!

Beautifully thick and flavoursome broth everytime, perfectly chewy noodles, delay on order but everything sorted out straight away with no issues, thanks.

I've made multiple purchases through matsudai each time probably 4 kits and I can't get enough the quality it fantastic the taste is even better I've even bought a ramen bowl specifically for when I buy kits from here if you're thinking of trying the kits from here sunset red is my personal favourite

I was a bit nervous before ordering as I was not sure what to expect. Everything arrived nicely packed, the instructions were super simple, the portion was large and the taste was sublime. Will definitely buy again!

yeah...

its good matsudai use less packaging now. but as it now comes as a single frozen block its impossible to have nice presentation of meat and menma.also also we can no longer reduce the spice sauce level for people who prefer more milder palette

I preferred when this wasn’t frozen

The flavour is great as always but the presentation really suffers from the new way of heating the broth and meat and oil together. It made the meal feel less special and I missed th crispy bits on the pork.

A delight to the senses

Fantastic looking dish which tasted just as good as it looked. I was concerned it would just taste 'hot' but the flavours were much more nuanced than that. Will certainly be ordering again!
