about this ramen: in the western world, tonkotsu ramen - often referred to simply as hakata ramen in japan - is arguably the most famous and coveted variant, the creamy white soup selling us a happily familiar experience. our version cuts no corners, and we hope you can taste the work that goes into it.

contents: rich tonkotsu (pork bone soup) with shio tare; garlic + negi aroma oil; handmade thin hakata noodles; braised pork belly chashu; kikurage mushrooms + beni-shoga. seasoned ajitama egg not included - add one here.

Classic Tonkotsu Broth

pork bone broth (pork, water, onion, garlic, ginger), seasoning (cooking sake [water, rice, rice koji], mirin [water, maltose, fructose-glucose syrup, rice, glutinous rice, spirit vinegar], sugar, kosher salt, sea salt, smoked sea salt, flavour enhancer: monosodium glutamate E621)

Toppings

Very tasty ramen

The food is excellent but a little bit of work could be spent on telling people how they assemble the kits as it seems a bit jumbled with some older and newer instructions crossing paths on the website and also missing download instruction cards. We figured it all out in the end and the food was belting. Will order again for sure!

Absolutely fantastic ramen that the whole family ate eagerly despite The heatwave on the day! Bit of a mix up on delivery but was immediately sorted, no fuss. Can’t recommend highly enough!

Best ramen set ever

please bring back the old packing style

I've used Matsudai for over two years. It has been mostly very good. There have been a few iterations of the items that came . The new change came in the last few months where almost all ingredients are as one reviewer says comes as one 'boil in a bag' Whereas previously they came in separate packages. This is fine for most of the stuff such as the wood ear mushrooms etc but the main issue is as has been pointed out in other reviews is the Cha shu. In the recent hot weather even slight melting of the packet results in water entering the meat and it breaks apart in the soup. The quality has really really dropped as a result. I have emailed feedback but they do not intend to change this so regretfully what made matsudai good for delivery has been lost. A true shame!

Did not meet my expectation

I expected it to be similar to Tonkotsu ramen (London) but the noodles have strange taste once cooked (slimy I think is the word). The broth is not as white and clear. Taste is average.

Repeat buyer, LOVE THIS KIT!

To be honest I can’t get enough of this. The amazing texture on the noodles, the richness of the broth and topped with speedy delivery :)

Delivered to Highland Scotland after I made a request. Not only that, but the service was exceptional every step of the way - and the ramen was equally fantastic.

Boil in the bag, a massive step backwards

We've ordered a few times from Matsuda and it's always been great, they've recently moved to boil in the back, it really takes away from the overall quality of the offering

Great as always just a shame about the new packaging

Quality of the ramen is great, never had an issue. Just not sure about the new packaging, nice idea being frozen but wish the chashu pork and kikurage were packaged separate to the broth as I prefer to slightly sear my pork.

You wouldn’t believe that you can get this quality and flavour from ingredients delivered to your door… fewer than 15 minutes prep, then enjoy! I will be getting this again soon.

Different!

When you reach 83 you don’t expect to find new culinary delights but with Matsudai Ramen I did. It was delicious. Easy to cook but a bit tricky if you had to manage one meat and one vegan. A worthwhile adventure!

Amazing flavours, memorable night in

First time at trying one of these kits and will be buying again. If only to experience the superb depth and balance of flavours and textures in the dish. I know this dish has moved on, but I'm sure others will be just as memorable and tasty. Struggled a bit with the instructions - a PDF rather than image of the instructions would be good if possible - and trying to find enough saucepans to cook 2 different ramen kits at the time. Nonetheless it was worth the effort in the end!

Nicey but pricey

Tastes lovely, portions are little smaller than I'd have liked and pretty prohibitive pricing for regular ordering. But hey it's nice but only for a treat now and again

Love this but...

Very tasty tonkotsu (and that egg!!), but please can we have the chashu in slices again? Obviously you want the flavour from the fat, but I like to cook it out and it's easier with the slices.

How can a broth be so incredible? I could have it every single day and never get tired of it.

Still the best ramen

Remember ordering these home kits around covid time and they are still amazing and the best ramen I’ve ever had. Had the pleasure of going to their pop-up in London years ago and the home kits are as delicious as the ‘live’ food. Money well spent and will continue to order!
