WHAT'S IN THE BOX

rich tonkotsu (pork bone soup) with shio tare; garlic + negi aroma oil; handmade thin hakata noodles; braised pork belly chashu; kikurage mushrooms + beni-shoga. seasoned ajitama egg not included - add one here. greens + onions not supplied as they freeze so badly. we’d add spring onion, and a pinch of sesame.

about this ramen: in the western world, tonkotsu ramen - often referred to simply as hakata ramen in japan - is arguably the most famous and coveted variant, the creamy white soup selling us a happily familiar experience. our version cuts no corners, and we hope you can taste the work that goes into it.

Classic Tonkotsu Broth

pork bone broth (pork, water, onion, garlic, ginger), seasoning (cooking sake [water, rice, rice koji], mirin [water, maltose, fructose-glucose syrup, rice, glutinous rice, spirit vinegar], sugar, kosher salt, sea salt, smoked sea salt, flavour enhancer: monosodium glutamate E621)

Toppings

pork belly, marinade (demerara sugar, garlic, mirin [water, maltose, fructose-glucose syrup, rice, glutinous rice, spirit vinegar], SOY sauce [water, SOYBEANS, WHEAT, salt, alcohol], ginger, spring onion, cooking sake [water, rice, rice koji]), kikurage (wood ear mushroom, salt), aroma oil (refined rapeseed oil and antifoaming agent E900, onion, garlic, ginger)

Beni Shōga

we ship monday to friday for next day delivery, tuesday to saturday. order by 2pm the day before. delivery is £5.95, free over £60. some postcodes are excluded.

how do i cook it

fifteen minutes, straight from the freezer. thaw the toppings under the cold tap. broth pack into boiling water for 10 minutes, chashu in for the last 2. noodles as instructed, then build. full instructions.

can i collect instead

yes, and it’s free. cardiff, weds to sat evenings and saturday daytime. taffs well, monday to friday in the daytime.

what if i’m not in

please send it somewhere someone will be in to take it. if plans change, you can change the address up to 9am the day before, or once it’s dispatched use the tracking link to leave it in a safe place or divert it with the courier.

do i need anything else

the kit is complete except for anything fresh. we don’t include onions or vegetable toppings, as they deliver terribly. if you’d like an egg, you can add one with the extra toppings.

can i subscribe

yes. kits arrive automatically each month and go straight in the freezer. what you pay depends on the kits and extras you pick. how subscriptions work.

Best you’ll get at home.

Honestly, the standard of Matsudais ramen kits is absolutely top notch. The broth is super rich, obviously umami heaven and full of flavours. The noodles cook easily and you can feel like a pro as you lay out the toppings in the most creative and beautiful way possible. The toppings included are definitely made better when you add more such as the eggs. Japanese relatives have absolutely loved them when tried and most importantly my mum who is a really strong and compassionate vegan has the opportunity to taste some incredible quality ramen, I know, I’ve tried them also and they are still so creamy the way pork bone marrow creates. Thank you! Cant wait to order more!

genuinely one of my favourite things in the world. its so flavourful and rich, but not so heavy that it leaves my eyes swimming at the end. it is now the only place I will order ramen from online. the food is brilliant and the customer service is second to none at this point. Many thanks to the team, for making delicious ramen and for my jar of ginger lol the fact that I didnt even remember to ask for extra like I usually would, and you guys know my order so well that you not only threw it in there anyway but gave me an entire jar (hilarious, also, btw) made my week.

Delicious food but packaging could be improved.

Overall a great product that I’ve already ordered more of because the taste is epic. Packaging could be improved; the cardboard box is delivered soggy because the food is frozen. Plus, one of our egg containers had split. Also, there’s no recipe card in the box? - could you add a QR code to the label to take you to the online version. Keep up the great work.

Very tasty ramen

The food is excellent but a little bit of work could be spent on telling people how they assemble the kits as it seems a bit jumbled with some older and newer instructions crossing paths on the website and also missing download instruction cards. We figured it all out in the end and the food was belting. Will order again for sure!

Best ramen set ever

Did not meet my expectation

I expected it to be similar to Tonkotsu ramen (London) but the noodles have strange taste once cooked (slimy I think is the word). The broth is not as white and clear. Taste is average.

Great service, great ramen

Delivered to Highland Scotland after I made a request. Not only that, but the service was exceptional every step of the way - and the ramen was equally fantastic.

Great as always just a shame about the new packaging

Quality of the ramen is great, never had an issue. Just not sure about the new packaging, nice idea being frozen but wish the chashu pork and kikurage were packaged separate to the broth as I prefer to slightly sear my pork.

Different!

When you reach 83 you don’t expect to find new culinary delights but with Matsudai Ramen I did. It was delicious. Easy to cook but a bit tricky if you had to manage one meat and one vegan. A worthwhile adventure!

Amazing flavours, memorable night in

First time at trying one of these kits and will be buying again. If only to experience the superb depth and balance of flavours and textures in the dish. I know this dish has moved on, but I'm sure others will be just as memorable and tasty. Struggled a bit with the instructions - a PDF rather than image of the instructions would be good if possible - and trying to find enough saucepans to cook 2 different ramen kits at the time. Nonetheless it was worth the effort in the end!

Nicey but pricey

Tastes lovely, portions are little smaller than I'd have liked and pretty prohibitive pricing for regular ordering. But hey it's nice but only for a treat now and again

Love this but...

Very tasty tonkotsu (and that egg!!), but please can we have the chashu in slices again? Obviously you want the flavour from the fat, but I like to cook it out and it's easier with the slices.
