How are Matsudai at Home kits made?

Our ramen is made in micro batches by our small team in Wales. 

Matsudai exists because our ramen tastes amazing, so we never compromise on quality and flavour. We work with wonderful Welsh and Japanese ingredients, and we never add preservatives or stabilisers to our bone broth. You’ll find the full list of ingredients for each ramen on the product page. 

On the day it’s made, we blast freeze our ramen to lock in flavour and ensure quality.

Why do we freeze our ramen?

Blast-freezing locks in flavour and is the best way to ensure the freshness, quality and consistency of our ramen, delivered across the UK. 

Designing our ramen kits to live in your freezer means greater flexibility and convenience for you, with flavour at home when you crave it, and quicker, easier assembly when you’re hungry.

Freezing kits is helping us bring our prices down, open more shipping days and expand our menu. It also makes our kitchen more sustainable, significantly reducing food waste and single-use plastic. 

How will my ramen arrive? 

Your kits will be built to order, each kit is one ramen. The kits are packed with ice, insulated and boxed. 

Your kits may defrost a little in transit. On warm days, we ship with extra ice but your ramen may rise to fridge temperature. You should still put your kits immediately in the freezer. We’ve worked with food scientists to ensure this is totally safe and never undermines the quality of our ramen. 

If your ramen is not chilled (if it is warmer than 8 degrees) when it arrives, somethings gone wrong in transit and you shouldn’t eat it. Please let us know and we’ll resolve this for you as soon as possible: orders@matsudai.co.uk

How should I store my ramen?

Store your ramen in the freezer. 

No matter when you intend to eat them, tonight, tomorrow, two weeks’ time, these kits are designed to live in the freezer, and they’ll be ready from-frozen in minutes.

How do ajitama eggs work?

Ajitama eggs are delicious, free range soy-marinated eggs, adored by ramen lovers. 

We sell ajitama eggs as a fresh addition to your frozen ramen kits. 

We deliver our eggs with a minimum 5-day shelf life and they should be stored in the fridge. So order eggs with your kits if you intend to eat your ramen in the few days following delivery.

I have an allergy. Can I eat Matsudai ramen kits?

You’ll find the full list of ingredients and allergens for each ramen kit on the product page. 

Please be aware that our kitchen handles most common food allergens. While we follow best practice and take precautions to reduce cross-contamination, we cannot guarantee that any menu item is completely free from allergens.

What if my order is delayed, missing, damaged or warm?

Occasionally, something goes wrong despite our best efforts and we’re so sorry to disappoint. If there’s an issue with your ramen, please be in touch and we’ll resolve it for you: orders@matsudai.co.uk

How long can I keep my ramen in the freezer? 

Every kit will have a use-by date, 3 months from production, but we think it’s best eaten within a month.

Can I cancel my order?

We can cancel your order up to 48 hours before your delivery date. Please contact us for help with this: orders@matsudai.co.uk
