about this ramen: iekei (pronounced E. A. K.)-style tonkotsu shoyu ramen - also known as yokohama-style, or house-style - was invented by minora yoshimura in 1974; it was his way of pairing classic tonkotsu ramen with tokyo tori shoyu ramen. it’s a lesser-known style outside of japan but a cult classic.
