ABOUT THIS RAMEN STYLE: this is our soup-less take on iekei (pronounced E. A. K.)-style tonkotsu shoyu ramen - also known as yokohama-style, or house-style - was invented by minora yoshimura in 1974; it was his way of pairing classic tonkotsu ramen with tokyo tori shoyu ramen. it’s a lesser-known style outside of japan but a cult classic.
CONTENTS: rich pork + chicken bone soup + shoyu sauce; schmaltz (chicken oil); xl portion of thick, flat, short, yellow noodles; braised pork belly chashu burnt ends; spinach; garlic; menma; and nori. please note, neither an egg yolk nor a seasoned ajitama egg is included. an ajitama is available seperately however. view the images to see more.
