about this ramen: kazuo yamagishi was the first person to offer tsukemen on a menu at legendary shop higashi ikebukuro taishoken some 50 years ago. however, in the last 20 years, it’s become extremely popular in japan, largely for its super-rich, uncompromising flavours. tsukemen, basically, is deconstructed ramen. but don’t let that put you off. unlike most deconstructions, this one exists for a reason - the noodles are shocked in cold water and served at room temperature, allowing the diner to consume their meal a little more slowly than with a bowl of hot, steaming ramen. it makes for a great summer bowl. this variation owes more to legendary modern shops like tomita or ganjya than the more old school shops, using pork, chicken, niboshi and saba-bushi to create a super-decadent broth to complement the huge portion of thick noodles. delicious, and not for the faint of heart.
