about this ramen: tori paitan is cooked the same way as tonkotsu, but using chicken bones instead of pork. however, this style of ramen lends itself to western flavours in a more natural way and makes a great autumn bowl. we use black pepper, celery salt + porcini mushrooms in the tare and very british aromats to finish the soup. the result is a decadent, creamy chicken ramen that’s incredibly addictive. this kit features no pork, and we also offer a vegan version.
