about this ramen: we’ve been getting asked to make a pork-free bowl again recently, so here we go. tori paitan is one of our absolute favourite styles of ramen and is a bit misunderstood in the west. if you’re pondering this kit - please just go ahead, it’s so good! our version features a small amount of really high-quality mixed dried seafood direct from the east coast of japan, and is a bulldozer of umami. rather than chashu pork, this comes with shredded chicken thighs which we’ve marinated in shio koji then simmered slowly in soy, sake and mirin. if you love tonkotsu ramen then you’ll love this.
Tom Parker Bowles - Mail on Sunday: "Tori paitan, from Matsudai Ramen in Cardiff, is a close relative of the more famous tonkotsu. But this speciality of Osaka is made from chicken rather than pork bones. Which makes the broth creamy, but rather lighter, managing to be both hearty and elegant, too. The noodles, cooked firm, have joyous bite and bounce, whilst everything from the thick slices of pork chashu, to the oozing ajitama egg and sharp, umami blast of shio tare seasoning, is top notch. A ramen to remember."
