about this ramen: we recently got hold of a bunch of really high-quality niboshi (dried, smoked sardines) from a market in tokyo and we thought - how can we showcase these beautiful little fish? we went classic, and this was the outcome - our NIBOSHI SHOYU. the soup is a 50:50 mix of golden chicken soup and niboshi dashi. it's really hard to put into words how delicious niboshi is when treated well, especially when it's of this quality. we've doubled down here, too. there's niboshi in the soup *and* the oil. this is a lot richer and lip-smacking than our classic shoyu, owing to the rich niboshi, yes but also to a couple of tablespoons of seabura (long-simmered, super unctuous pork fat) which runs through the soup. one for the ramen heads!
