ABOUT THIS PRODUCT

about this ramen: new wave ramen came down from manchester in september and took over our kitchen for the day. we were properly impressed. their lamb tantanmen is infamous, and when we asked who fancied it as a kit, you did. tantanmen is the japanese take on dan dan noodles. new wave build theirs on chicken broth, with a spicy sesame tare and braised lamb shoulder shredded into its own sauce. it comes with their signature noodles, the same ones they used at the takeover, plus our house rayu and a pinch of togarashi. their recipe, made by us in taffs well. limited run.

how it arrives frozen, packed with ice. kits can soften in transit and that is fine - what matters is that they arrive cold. ice crystals still in the broth pack means straight in the freezer. it keeps in there for up to three months. if one ever turns up warm, don’t risk it - email athome@matsudai.co.uk and we’ll send another. more on how it arrives.

when will it arrive

we ship monday to friday for next day delivery, tuesday to saturday. order by 2pm the day before. delivery is £5.75, free over £60. some postcodes are excluded.

how do i cook it

fifteen minutes, straight from the freezer. thaw the toppings under the cold tap. broth pack into boiling water for 10 minutes, chashu in for the last 2. noodles as instructed, then build. full instructions.

can i collect instead

yes, and it’s free. cardiff, weds to sat evenings and saturday daytime. taffs well, monday to friday in the daytime.

what if i’m not in

please send it somewhere someone will be in to take it. if plans change, you can change the address up to 9am the day before, or once it’s dispatched use the tracking link to leave it in a safe place or divert it with the courier.

do i need anything else

the kit is complete except for anything fresh. we don’t include onions or vegetable toppings, as they deliver terribly. if you’d like an egg, you can add one with the extra toppings.

can i subscribe

yes. kits arrive automatically each month and go straight in the freezer. what you pay depends on the kits and extras you pick. how subscriptions work.
