ABOUT THIS PRODUCT

about this ramen: tsukemen is dipping ramen. thick noodles shocked in cold water and served at room temperature, next to a small cup of ridiculously concentrated soup. you dunk, you slurp, you take your time. kazuo yamagishi first put it on a menu at higashi ikebukuro taishoken some 50 years ago and it's since become one of the most obsessed-over styles in japan. ours leans modern - closer to tomita or ganjya than the old school shops - with pork, chicken, niboshi and saba-bushi cooked down into a properly decadent broth. a huge portion of noodles. not for the faint of heart.
