matsudai are wales’ first and only purveyors of proper, no-corners-cut ramen. matsudai ramen is a 45-seat ramen shop in grangetown, cardiff, with a busy open kitchen. matsudai at home is our production kitchen and hq in taffs well, where we make and ship hundreds of ramen kits a week all over the uk. in both places you will be working with a small, talented team.

the role
the kitchen porter is essential to the smooth running of our kitchens. they support the kitchen teams by leading on cleanliness, organisation and high standards of hygiene. this role needs the flexibility to work across both sites.

what you would be doing
- cleaning crockery, cutlery, pots, pans and utensils, using our dishwasher
- carrying out opening, closing and cleaning checklists: sanitising work surfaces, fridges, equipment, sinks and walls, and sweeping and mopping floors
- waste management - emptying bins and managing recycling
- organising and putting away deliveries
- replenishing stock for chefs during busy services
- supporting with basic food preparation or packing as required, including peeling eggs, washing or chopping vegetables
- understanding and working strictly within our food safety controls
- contributing towards a collaborative and supportive kitchen with high standards
about you
this role will suit someone who enjoys working as part of a small team, is hard-working, has excellent attention to detail and brings a positive attitude to work each day. you will know how to prioritise and manage your time, be a good communicator, and feel comfortable in a fast-paced kitchen. you will need to be 18 or older for this role.

pay and benefits
- £12.71 an hour. at the restaurant, tips are paid via tronc, which has averaged £3.67 an hour over the last six months
- hours a week to be agreed with the successful candidate
- a six-month fixed-term contract, with the option of extension if business allows
- paid holiday accrued at 12.07% of hours worked, plus an extra day off for your birthday
- fully funded training, depending on your skills, experience and needs
