matsudai ramen is looking for an experienced kitchen manager / head chef to join our restaurant team
We are seeking a Kitchen Manager to head up the back-of-house team at Matsudai Ramen; an independent, 66-cover ramen bar in Grangetown, Cardiff. We’re a small, dedicated team, with a mission to serve up incredible ramen.
Our sister site and production kitchen handles the bulk of our main menu, meaning the focus at the restaurant is on seamless service of the highest quality food, seasonal specials and precision prep.
As leader of the kitchen team at The Bank you’ll be invaluable in creating an outstanding experience for our guests by upholding the quality and safety of our food.
The ideal candidate will be stable and dependable, highly motivated, a great communicator and organiser, upbeat and unflappable. They will be experienced at running and organising a kitchen, hiring and training, as well as developing and uniting a team. The Kitchen Manager is responsible for inventory management, creating rotas, overseeing our HACCP, records management and EHO readiness, and keeping our food costs at an agreed percentage.
It is very important to us that our Kitchen Manager has a desire to learn the intricacies of ramen and Japanese cuisine more broadly, and they’ll be given our time and support to build a strong understanding.
The key responsibilities of this role will include:
- Preparation and Service
Run efficient, collaborative services, ensuring our food goes out at an extremely high standard and exhibit a keen eye for detail in overseeing the kitchen team’s work. - Management and team building
Develop, unite and motivate your team, evaluating and managing their performance as required. As necessary, hire, welcome and train new staff, always fostering a healthy working culture of professionalism, ambition and emotional literacy.
Uphold and improve the team’s operating procedures, working with other managers to introduce change.
Schedule the kitchen team’s shifts, working with the restaurant manager to account for trends and meet labour budgets. - Inventory and stock management
Work with our in-house inventory management system, MarketMan, to take stock, place orders, control cost of goods, minimise waste, and hold our relationships with suppliers.Run a back-of-house that is organised and tidy, systematically maximising the space available. - Due Diligence and Compliance
Take the lead on our HACCP, including our record keeping, cleanliness and allergen controls, working with the Operations Manager to solve any issues and ensure our team and our kitchen is EHO-ready. - Development and Events
Bring your ideas and creativity to work and empower others to do the same. You’ll have lots of freedom to work with seasonal specials, pickles, ferments and desserts. James would love your input on the feasibility and scaling of recipes, collaborations and special events.
From time to time, you’ll support visiting chefs to deliver collaborations at Matsudai and deliver Matsudai pop-ups at other locations.
Working week: This is a full-time position. The kitchen is open Tues - Thurs 5 - 9 Fri 5 - 9:30 Sat 12 - 3 5 – 9:30 Sun 12 - 8
Renumeration:
Salary range £28 – 34k, dependent on experience.
1.25% quarterly bonus available (i.e. 5% annually) for meeting performance indicators.
·We operate Tronc, through which gratuity is shared equitably, based on shifts worked. This role was in receipt of an average of £416 per calendar month, across the last 6 months, making for potential maximum yearly earnings of >£40k
