ABOUT MATSUDAI RAMEN...
Matsudai Ramen are Wales' first and only purveyors of proper, no-corners-cut ramen.
Launched in September 2019 by self-confessed ‘ramen geek’ James Chant, Matsudai started life as a purely creative outlet. James had never set foot in a professional kitchen and was so disillusioned with the music industry work he had been doing all his life that his mental health had reached an all-time low. When offered the chance of a pop-up he grabbed at it with both hands - designing the logo, creating the dishes, building the website - assuming that it’d be a fun one-off and relishing the chance to make something. He assumed it'd be a fun one-off. The world had other ideas.
By the time coronavirus hit, Matsudai had taken on a life of its own and so, during the summer of 2020, James set-up a prep kitchen in South Wales and started imagining what a great ramen kit might look like. These kits were launched properly in January 2021 and since then Matsudai have delivered tens of thousands of them to every corner of the UK, receiving kind words and praise from such heroes as Jay Rayner, Tim Anderson, Tom Parker Bowles, Melissa Thompson, and apperaing in articles in the Observer, the Guardian, the Mail, the Independent and many many more. James also appeared in a video with cult YouTuber Uncle Roger, which has been viewed over 5 million times.
When lockdown restrictions started lifting in summer 2021 James took Matsudai 'on tour', with sell-out pop-ups across the UK in places such as Manchester, Bristol, Cardiff and London, where Matsudai took over the kitchen of the British Film Institute in Soho for a month. The next item on the agenda is to open a flagship restaurant in Cardiff and then, who knows?
With James having no background in cooking whatsoever, Matsudai's success lies in the fact that this is a true labour of love - an exercise in taking things as far as you can and not compromising. Authentic ramen is something of a misnomer - ramen is such a new food, relative to other Japanese cuisines, that traditional ramen doesn’t yet exist - or not really. Besides, Matsudai Ramen is just as heavily influenced by US ramen chefs as Japanese ones, getting started by emulating the bowls of people like Mike Satinover, Ivan Orkin and Keizo Shimamoto. Whatever; this is PROPER ramen, and it has attracted a devoted following amongst the UK's food-loving community.
This is akin to the steaming bowl of shoyu ramen from a late-night street cart - a comforting classic.

Really nice kit. Delicious and easy to prepare. Although I was feeding a few with multiple orders which was a bit of a faff. Would have appreciated a paper copy of instructions rather than going back and forth on the website. But proof was in the pudding. It was delicious and I will order again.

All of the ramen I've had from matsudai is simply awesome. I hope they never stop making it.
This is one of the first times that everyone has been quiet around the food table… Even my mother, who dislikes food a 'bit different' absolutely loved it. The soup is delicious, the noodles were something else (The best I've ever tasted) and the eggs were perfect.
On delivery, one of our table sets had broken in transit. Matsudai were brilliant about replacing it same-day. The flavour was, as always, delicious.
Delicious, easy, ready when you are genius kits for home. Just lovely.
